The story of Perry’s Steakhouse & Grille began in 1979 when Bob Perry opened Perry’s Butcher Shop & Deli in Houston. This modest meat market quickly became a neighborhood staple, renowned for its top-quality meats and friendly service. The community’s trust in Perry’s quality laid the foundation for future expansions.

From butcher shop to fine dining

In 1986, Chris Perry, Bob’s son, had the foresight to transform the butcher shop by adding dining tables, thus merging the concept of a meat market with a casual dining experience. This innovative idea was an instant hit, and loyal customers flocked to enjoy meals prepared from the freshest cuts of meat available.

Inspired by the success of this venture, Chris Perry decided to take a bold step in 1993 by opening Perry’s Steakhouse & Grille. This new establishment combined impeccable palate-pleasing dishes with exquisite presentation, setting a new standard for fine dining in Houston. The restaurant quickly gained acclaim for its signature dishes, including the now-famous seven-finger-high pork chop, carved tableside.

Expansion and growth

By 2001, Perry’s Steakhouse & Grille began expanding within the Houston area, starting with a new location in The Woodlands. This marked the beginning of Perry’s growth beyond its original butcher shop roots.

In 2008, Perry’s took a significant step by opening its first urban location in Downtown Austin. This move showcased Perry’s ability to blend its traditional roots with the vibrant energy of city dining. The success in Austin paved the way for further expansion outside Texas, beginning with the Chicago location in 2013.

Innovations and new concepts

Perry’s continued to innovate, launching CARVE American Grille in 2019. Located in Southwest Austin, CARVE offered a live fire, an eclectic menu, and a butcher room, all paying homage to its butcher shop origins. This new concept showcased Perry’s commitment to evolving while staying true to its roots.

In 2020, Perry’s adapted to changing times by launching Perry’s Online Market. This online platform allows customers nationwide to enjoy Perry’s famous pork chop, steak knives, butter, and seasoning from the comfort of their homes.

The most recent addition to the Perry’s family is VERDAD True Modern Mexican, which opened in Central Austin in December 2023. This restaurant and bar concept brings a modern twist to traditional Mexican cuisine, further expanding Perry’s diverse culinary portfolio.

The Perry’s experience at River Oaks

After four decades of serving the greater Houston area, Perry’s opened its first inner-Loop restaurant in the prestigious River Oaks neighborhood. This location is a testament to Perry’s commitment to providing an unparalleled dining experience. The expansive two-story design features an award-winning menu, tableside presentations, the vibrant Bar 79®, and exceptional service, all contributing to a Rare and Well Done® experience.

Today, Perry’s Steakhouse & Grille operates numerous locations across Texas and in seven other states. Its sister concepts, including Perry & Sons Market & Grille, CARVE American Grille, and VERDAD True Modern Mexican, continue to expand Perry’s culinary footprint.
